Sweet & Spicy Chicken Bowl

Makes 4 servings

Ingredients:

  • 1.25lb chicken tenderloins

  • 3 tbsp cornstarch

  • pink salt, pepper

  • 2 tbsp avocado oil

  • 3 tsp minced garlic

  • 1/2 tsp red pepper flakes (optional for spice)

  • 1-10oz bag frozen green beans

  • 1 1/2 cups cooked rice

Sauce Ingredients:

  • 3 tbsp raw honey

  • 2 tbsp siracha

  • 2 tbsp coconut aminos

  • 1 tbsp rice vinegar

  • 1 tsp sesame oil

Instructions:

Combine sauce ingredients in a small bowl and stir to combine, set aside. Cut chicken tenderloins in bite size pieces and season with pink salt and pepper. Toss in corn starch until well coated. In a skillet, warm up 1 tbsp avocado oil on medium heat. Add chicken and saute until cooked through then remove onto a plate. Meanwhile, cook your rice in a rice cooker or saucepan per package directions to yield around 1 1/2 cups of rice. Place frozen bag of green beans in microwave to cook (if package is microwaveable). After chicken is removed, add 1 tbsp avocado oil, garlic, and red chili flakes (if desired) and sauté until garlic is fragrant. Add sauce to garlic in skillet and allow to thicken, stirring gently if needed. Add chicken back in and toss around until well coated, add in green beans if you would like it incorprated into sauce. Dish rice into bowl (1/2 cup per serving) then chicken/green bean mixture with sauce. I added sesame seeds on top if you have it!
