Pumpkin Pie Granola

Ingredients
1 1/2 cup oats
2 tbsp pecans, chopped (any nuts of choice!)
2 tbsp pumpkin seeds
2 tbsp chia seeds
2 tbsp flax seeds
1/2 tsp pumpkin pie spice
1/4 tsp salt
1/3 cup pumpkin puree
1/4 cup maple syrup
1/4 cup olive oil
1/4 tsp vanilla
Instructions
Preheat oven to 350 F and line a baking sheet with parchment paper. In a large bowl, mix all dry ingredients: oats, nuts, pumpkin seeds, chia seeds, flax seeds, pumpkin pie spice, and salt. In a separate bowl, whisk together the pumpkin purée, maple syrup, olive oil, and vanilla until smooth. Pour the wet mixture into the dry mixture and stir well until everything is fully coated. Spread the granola evenly on the baking sheet and press it down lightly with a spatula (this helps create clusters). Bake for 25–30 minutes, stirring halfway through. Allow to fully cool on the pan — it will crisp up as it cools. Can serve over a yogurt bowl for breakfast or enjoy alone for a great snack!
