French Toast Bake
Makes 4 servings
Ingredients
10 slices of bread - I used this keto friendly bread found at Aldi!
2 eggs
3 cups and 3.5 tbsp of egg whites (around 300 grams) for mixture
Extra 1/2 cup of egg whites to top before baking
2 scoops vanilla protein powder
Small splash of vanilla
Cinnamon, to taste
1/2 cup blueberries
Instructions
Preheat the oven to 350°F and lightly oil or spray a small baking dish. Cut each slice of bread into four pieces and set aside. In a large mixing bowl, whisk together the eggs, 3 cups plus 3 ½ tablespoons of egg whites (about 300 grams), protein powder, vanilla, and cinnamon until smooth. Gently fold the bread pieces into the mixture, making sure each piece is well coated. If desired, refrigerate the mixture for about an hour to allow the bread to soak more thoroughly. Transfer everything into the prepared baking dish, then drizzle the remaining ½ cup of egg whites evenly over the top. Sprinkle the blueberries across the surface before placing the dish in the oven. Bake for 30 to 40 minutes, or until the center is set and the top is golden. Allow to cool slightly before slicing into four servings and enjoy.
