Chicken Sausage Noodle Soup

Makes 6 servings

Ingredients

  • 1 10 oz. Mirepoix mix bag, frozen (carrots, celery, and onion mix)

  • 12 oz. Chicken Apple Sausage, sliced (pack of 4)

  • 32 oz. Chicken Broth

  • 2 cups of water

  • 8 oz. pasta of choice

  • 2 tbsp. olive oil

  • Garlic powder, to taste

  • Salt and pepper, to taste

Instructions

In a large pot or deep skillet, heat 2 tablespoons of olive oil over medium heat. Add the frozen mirepoix mix and cook for 5–7 minutes, stirring occasionally, until the vegetables are softened and translucent. Stir in the sliced chicken apple sausage and cook for another 2–3 minutes until lightly browned. Pour in the chicken broth and water, then add your pasta of choice. Stir to combine. Sprinkle in garlic powder, salt, and pepper to taste. Bring the mixture to a boil, then reduce heat to medium-low. Let simmer uncovered for 10–12 minutes, or until the pasta is tender and the flavors have melded. Taste and adjust seasoning if needed. Serve warm and enjoy!
