Zucchini Boats

Makes 4 servings

Ingredients

  • 2 large zucchinis

  • 1/2 lb. ground beef (or more if you want extra filling)

  • 1 cup of Marinara sauce

  • 1/2 medium onion, diced

  • 2 cloves garlic, minced

  • 1/4 cup Parmesan cheese

  • 1-2 tbsp olive oil

  • Salt and pepper, to taste

Instructions

Preheat oven to 375 degrees F. Slice the zucchinis in half, lengthwise. Use a spoon to scoop out the center, leaving about ¼-inch border around the edges to form “boats”. Optional, place the scooped-out zucchini flesh aside to use in the filling.

Heat olive oil in a skillet over medium heat. Add onion and cook until softened and then add garlic. Stir in ground beef, season with salt and pepper, and cook until browned. If you choose to add the zucchini flesh, chop and add it into the skillet and mix with the ground beef. Stir in marinara sauce and let simmer 3-4 minutes. Mix in parmesan cheese until well combined.

Place zucchini halves cut side up in a baking dish. Lightly season with salt and pepper. Spoon the beef mixture evenly into each zucchini and sprinkle extra parmesan on top if desired. Bake for 25 minutes until the zucchini is tender and the tops are slightly golden.
