Blender Pumpkin Protein Muffins

Makes 12 muffins

Ingredients:

  • 1 1/2 cups oats

  • 1 cup pumpkin puree

  • 1 cup cottage cheese 1%

  • 2 eggs

  • 2 scoops protein powder (I recommend 1st phorm chocolate or vanilla)

  • 1 tsp pumpkin pie spice

  • *if you want more of a sweet breakfast muffin, add 1/4-1/2 cup coconut sugar or pure maple syrup

  • 1-2 tsp cinnamon

  • 1 tsp baking powder

  • 1 tsp baking soda

Preheat oven to 350 F. In a blender, add oats and blend until a fine consistency. Add remaining ingredients until well mixed. Line a muffin tin or with non-stick spray. Scoop mixture evenly into each muffin tin (makes 12). Bake for 20 min, check for a clean knife, bake for 2-5 minutes until knife or toothpick come out clean.

This can be served as a snack or for breakfast.

For breakfast, I reccomend serving with 6 applegate mini chicken breakfast sausages. This will add: 219 calories, 18g protein, 4g carbs, and 14g fat.
