BBQ Meatloaf, Cauli Mash, and Peas
Makes 4 servings
Meat loaf Ingredients:
1.25lb 93% grass fed ground beef
1 small onion, diced
1 egg
3 tbsp bbq sauce
2 tbsp ketchup
1 tsp pink salt
1/2 tsp pepper
1 tsp oregano
1/2 cup oat flour (blend in blender)
Topping: 1/2 cup bbq sauce
Cauli Mash + Peas Ingredients:
1-16oz bag riced cauliflower
2 tbsp butter
1/4 cup parmesean
pink salt, pepper
1/2 tsp garlic powder
1-12oz bag frozen peas
Instructions:
Preheat your oven to 375°F. Line a loaf pan with parchment paper or lightly grease it. Prepare the meatloaf. In a large mixing bowl, combine the ground beef, diced onion, egg, 3 tablespoons BBQ sauce, ketchup, pink salt, pepper, oregano, and oat flour. Mix until just combined, being careful not to overmix. Transfer the meat mixture to the prepared loaf pan and gently press it into an even layer. Bake for 40 minutes. Remove the meatloaf from the oven and spread the remaining ½ cup BBQ sauce evenly over the top. Return to the oven and bake for an additional 10–15 minutes, or until the internal temperature reaches 160°F. While the meatloaf is baking, steam or microwave the riced cauliflower according to the package directions until tender. Transfer to a food processor or blender with the butter, Parmesan, pink salt, pepper, and garlic powder. Blend until smooth and creamy. (For a chunkier texture, simply mash with a potato masher.) Microwave or cook the frozen peas on the stovetop according to the package directions. Season lightly with pink salt and pepper, if desired. Let the meatloaf rest for 5–10 minutes before slicing. Divide the meatloaf, cauliflower mash, and peas evenly among four plates. Enjoy!
